Im in this hobby for the nostalgia. Most of my bikes are ongoing projects.
My day-to-day riding consists of commuting, bar-hopping and mountain biking.

Love it! I made Barbacoa a few months ago and shared it in this thread. Haven’t made Calabacita in years though and I love me some squash and fire roasted corn and tomatoes together. You use dry black beans or canned? Good job here!

I know this was good! You go the traditional route with rice and ground beef filling? I sometimes cut the mixture with sweet sausage and 85/15 ground beef with the rice, onion, and a little parmigiana cheese to tighten it up. The secret is in the sauce to make really good cabbage rolls IMO. Well played on this classic dish.

Canned. Drained/rinsed and add my own water. Bean juice is one of the grosser things in life.
