Ribs about to go on (Utilizing the “Texas Crutch” method today) so looking at about 2.5 hours cook time...maybe 3 hours. Low and slow at 250 to 275 degrees. No propane gas grills here not saying that there’s anything wrong with that type of method.

Chicken is marinated (Garlic and Orange Juice plus my secret spices) and will be going on shortly with some sausages, thick cut pork cajun rubbed pork chops, corn on the cob.

Took tomorrow off, worked all day so didn't get these on until 7:00, almost ready to come off around 10:00.  Upper White Trash feast. .


If I had a nickel for every time I've been cursed by a puppet I would have 2 nickels.  Which isn't a lot but it's weird that it happened twice.

You asked a excellent question. Mainly after cooking this much is for our end of the weekend family dinner. Went a little late as far as serving time but it’s expected trying to fit everything in a weekend off with our hectic schedules.

As far as what’s leftover I bring at least 3 big portions with all the trimmings into work for my bro’s in my department as they always appreciate it a slide a me a few generous donation bucks my way for my troubles but I still do enjoy cooking and making people happy even if it’s not professionally anymore as it was for 26 years of my life.

Then what’s leftover from there I freeze with my Food Saver vacuum machine for a maximum of 6 months in which food doesn’t even last that long in our home as everyone is on the go eating and doing the daily grind so hardly any waste from freezer burn or spoiling of anything. I’m very big on not letting food go to waste.  I gotta tell you I saved so much money through the years with this invention as it’s one of the best investments I’ve ever made when it comes to my home kitchen. Highly recommended.

As far as how much for a rib? Tricky question I say. Two racks was $24. One bone cut will cost you $1.12 added my time and effort to $1.89 per bone cut but I’m having a special since McDonald’s isn’t selling the McRib until next year so let’s say it’s on the house. wink
