What exactly is this "investment casting" process? I see it on some seriously nice NS frames, but I'm not sure why it's advantageous compared to welding, etc...? Is it stronger?

People we argue to the end of the earth which method of jointing two/three tubes together is best. Both have pros and cons but regarding the bb shell and head tube in particular i would say casting is better.
I havn't seen a road or race bike with broken joints and they have been using cast parts for decades. Look up vitus bmx's too very similar principle with glued joints

But what does the "casting" refer to? Is it a method of joining tubes? Or forming certain parts of the frame (like a molten metal poured into a mold)?
I seriously have no clue...lol.

It refers to actual cast sections which are usually the awkward intersection between tubes or at tube ends like drop outs
check this vitus out, the silver sections are all cast ( in a traditional sense ) leaving the tubes the simple job of spanning the space between sections
